Instant Pot Pav Bhaji, made Vegan! (No special Masala Required!!!)

Instant Pot Pav Bhaji, made Vegan! (No special Masala Required!!!) This Instant Pot Pav Bhaji DOES NOT require any special Pav Bhaji Masala or mixes, and can be made with every day spices in your pantry today! Make it vegan with Vegan Butter or Margarine. Best of all, the Instant Pot makes making Vegan Pav Bhaji faster than ever.

INGREDIENTS:

Aromatics:
1 Tb. Oil
1 Tb. Butter or Vegan Margarine -
1/2 tsp. Cumin -
1 medium Onion, Chopped
2 Tb. Garlic Paste

For the Masala (Spices):
2 tsp. Garam Masala -
2 tsp. Coriander Powder -
2 tsp. Chili Powder -
1 Tb. Kashmiri Chili ( or Paprika (
1 tsp. Salt -
1/2 tsp. Turmeric -

Vegetables:
3 Tomatoes
1 med. Bell Pepper
2 Potatoes
1/4 Head Cauliflower
1 pc. Carrot
1/4 cup Cilantro
Water to cover (1.5 - 2 cups)

Cook on High Pressure for 10 minutes, quick release
Set to sauté to evaporate water / then mash with a potato masher.

Toppings:
2 Tb. Butter or Vegan Margarine -
1/2 cup Frozen Peas
1/4 cup Kasoori Methi -
1 tsp Garam Masala -
Salt to taste

Serve with:
Toasted Buns or Dinner Rolls
Diced Onions
Sliced Green Chilis
Lime Wedges
Sprinkle of Cilantro
Pat of Butter
