Capon & Yule log - Traditional Christmas Fare From France | Euromaxx As tradition has it, the Gallic rooster is a symbol of pride, courage and – especially –manhood. But once he’s been robbed of the latter, he becomes a French delicacy. A castrated rooster is called a "capon", and is served as a traditional Christmas dish. They are specially bred for the end-of-year festivities. The French have also come up with a special Christmas dessert, the "Bûche de Noel", or Yule log: a sweet biscuit roll. For the 'Traditional Christmas Fare' series we went to Bordeaux in the south-west of France to witness the preparation of these French delicacies.
