Ingredients:-
* Gooseberry (आंवला) - 10-11 pieces
* Water (पानी) - 1 cup
* Fenugreek seeds (मेथी दाना) - 2 tbsp
* Lemon juice (निम्बू का रस) - 1 lemon juice
* Jaggery (गुड़) - 1 tbsp
* Mustard oil (सरसों तेल) - 1/4 cup
* Dry whole coriander seeds (सूखा साबुत धनिया) - 1 tsp
* Fennel seeds (सौफ) - 2 tsp
* Cumin seeds (जीरा) - 1/2 tsp
* Nigella seeds (कलौंजी) - 1/4 tsp
* Yellow Mustard Seeds (राइ दाल) - 1.5 tbsp
* Asafoetida (हींग) - 1/2 tsp
* Chili powder (लाल मिर्च पाउडर) - 1/2 tsp
* Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर) - 1 tsp
* Turmeric powder (हल्दी पाउडर) - 1/2 tsp
* Salt (नमक) - 1-1.5 tsp
* Black Salt (काला नमक) - 1/2 tsp

INSTANT GOOSEBERRY (AMLA) PICKLE RECIPE:
Take 10-11 Gooseberries and wash them.
Put 1 cup of water in the Pressure Cooker and place a vessel in it.
Put the Gooseberries in that vessel and cook them by steam.
Give 5-6 whistles and cook the Gooseberries till the cracks shown on them.
Turn off the flame and let them to be cool down thereafter cut them in pieces.
Soak 2 tbsp of Fenugreek Seeds for 2 hours in lukewarm water and then put some Lemon Juice and 1 tbsp of Jaggery in it and keep it aside.
Take a pan and put ¼ cup of Mustard Oil in it and heat it.
Turn the flame slow and put 1 tsp of Dry Whole Coriander Seeds, 2 tsp of Fennel Seeds, ½ tsp of Cumin Seeds, ¼ tsp of Nigella Seeds, 1.5 tbsp of Yellow Mustard Seeds.
Then, Put ½ tsp of Asafoetida and put the pieces of Gooseberries in it and let them to be cooked for sometime. Then, put Lemon Juice, Jaggery and Fenugreek Seeds mixture in it and add some spices in it like- ½ tsp of Red Chili Powder, 1 tsp of Kashmiri Red Chili Powder, ½ tsp of Turmeric Powder, 1-1.5 tsp of Salt, ½ tsp of Black Salt. Cover them and let them to be cooked.
After sometime the water will get dry and it will releases the Oil. Now turn off the flame. The Instant Gooseberry Pickle is ready.
