Stuffed Achari Torai
Serves 5-6

Ingredients:
-Tamatar (Tomatoes) cubed 2 medium
-Achar gosht masala 4 tbs
-Sarson ka tel (Mustard oil) 1 tbs
-Lemon juice 2-3 tbs
-Torai (Ridge gourd) 750 g
-Hari mirch (Green chilli) 5-6
-Sarson ka tel (Mustard oil) 1/4 Cup
-Zeera (Cumin seeds) ½ tbs
-Kalonji (Nigella seeds) ½ tsp
-Rai dana (Mustard seeds) ½ tsp
-Dried red chillies 2-3
-Kary pata (Curry leaves) 9-10
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Pyaz (Onion) sliced 1 large
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Kasuri meethi (Dried fenugreek leaves) ½ tbs
Directions:
-In grinder,add tomatoes and grind well & set aside.
-In bowl,add achar gosht masala,mustard oil,lemon juice and mix well.
-Peel ridge gourd and cut into three pieces,slit from the center & stuffed with prepared achar masala.
-Slid green chillies and stuffed with prepared achar masala & set aside.
-In wok,add mustard oil and bring it to smoke,add cumin seeds,nigella seeds,mustard seeds,dried red chilli and mix.
-Add curry leaves,ginger garlic paste and mix well.
-Add onion and fry until translucent.
-Add grinded tomato and mix well.
-Add salt,red chilli powder,turmeric powder,garam masala powder,mix well and cook until oil separates.
-Now add stuffed ridge gourd,cover and cook on low flame for 20-25 minutes.
-Add stuffed green chillies,dried fenugreek leaves,cover and simmer on low flame for 4-5 minutes & serve!

-Bowl mein achar gosht masala,sarson ka tel aur lemon juice dal ker ache tarhan mix ker lein.
-Torai ko cheel lein aur teen pieces mein cut ker ka bech mein slit laga lein aur prepared achar masala bhar dein.
-Hari mirch ko slit laga lein aur prepared achar masala bhar dein & side per rakh dein.
-Karhai mein sarson ka tel dal dein aur smoke anay tak garam ker lein,zeera,kalonji,rai dana aur dried red chillies dal ker mix karein.
-Kary pata aur adrak lehsan paste dal ker ache tarhan mix ker lein.
-Pyaz dal dein aur translucent hunay tak fry ker lein.
-Grinded tamatar dal ker ache tarhan mix ker lein.
-Namak,lal mirch powder,haldee powder aur garam masala powder dal ker ache tarhan mix karein aur oil alag hunay tak paka lein.
-Ab stuffed torai dal ker dhak dein aur halki ancch per 20-25 minutes kliya paka lein.
-Stuffed hari mirch aur kasuri meethi dal ker dhak dein aur halki ancch per 4-5 minute kliya dum per rakh dein & serve karein.
